During this 2 hour course on Tuesday, August 14th, Deborah and Craig will explain the intricacies of wine and cheese pairing, the subtleties that determine which wines go with which cheeses, and guide you through 6 different wine and cheese pairings.

Suveg Cellars 2016 Viognier and Dutch Edam
Notes of honeysuckle, lush white peaches, ripe melon, fresh orange peel. The wine's naturally low acidity is perfectly balanced by its brightness, vibrancy and long crisp finish. We're pairing the Viognier with Babybel. A French version of Dutch Edam cheese sold internationally by 'The Bel Group, France' since 1952. Today nearly 75% of Mini Babybel is consumed outside of France. This is a semi-hard cheese made from pasteurized cow milk. The crisp fruitiness of the wine compliments the creamy smoothness of the cheese.
Suveg Cellars 2015 Roussanne and Comte
Our 2015 vintage is a classic representation of a traditional Rhone-style blend of 93% Roussanne and 7% Viognier. Full-bodied, aromatic and complex wine hints of garden herbs, lime blossoms, quince, fresh white peaches, Bosc pear, melon, and honey. We're pairing our Roussanne with Comte (also called Gruyère de Comté or Comte Fort Saint Antoine). A French cheese produced in the Jura Massif region of Eastern France. This hard mountain cheese is matured in special caves where the cheese gets its unique taste, texture and color. Comté is ripened for a minimum of 4 months to 18 or 24 months.
Suveg Cellars 2014 Primitivo and Italian Truffle
An opulent, well-balanced wine with hints of cherries, stone orchard fruit, subtle vanilla oak, slight smokiness and clove and cinnamon spice. We're pairing the Primitivo with Italian Truffle. This semi-soft, creamy cheese is made from cow’s milk and is laced throughout with slivers of black truffle. It's earthy and aromatic without being overwhelming and is a good match with the smokiness of the Primativo.
Suveg Cellars 2014 Sangiovese with Toscano with Black Pepper
Rich with aromas of cherries, bold red fruit, violets and orange peel. Elegantly finishes with subtle oak, mild tannins, and lively acidity. We're pairing the Sangiovese with Toscano with Black Pepper. Robust, nutty flavor brings aged Parmesan to mind, but also a creaminess like a farmstead Cheddar. Black pepper crusted edges add a stronger flavor which pairs well with the tannin and acidity in the Sangiovese.
Suveg Cellars 2014 Cabernet Sauvignon with Gouda
Suggestions of blackberry, cherry, currant and ripe fruit, resulting in a generously complex and finely balanced Bordeaux varietal. We're pairing the 2014 Cabernet with Gouda, (or "How-da" as the locals say) A Dutch cheese named after the city of Gouda in the Netherlands. It is a semi-hard cheese with a nutty taste and creamy, smooth texture
Suveg Cellars 2014 Attitude Adjustment (Nebbiolo) with Emmental
Nebbiolo - Fresh picked cherries, red licorice, tar, pipe tobacco, leather, violets, rose petals, forest floor, and hints of espresso like bitterness. We're pairing our Nebbiolo with Emmental (Emmentaler or Emmenthal) is a yellow, medium-hard Swiss cheese that originated in the area around Emmental, Canton Bern. It has a savory, but mild taste.
